New Red Potato Salad

This is a wonderful no fail potato salad.

New Red Potato Salad Ingredients

  • 3 pounds unpeeled red potatoes

  • 4 eggs

  • 1? cups mayonnaise

  • 2 tablespoons milk

  • 2 tablespoons distilled white vinegar

  • cup sliced green onions

  • teaspoon salt

  • teaspoon ground black pepper

  • 1 cup sliced celery

How to Make New Red Potato Salad

  1. Bring a large pot of salted water to a boil. Add red potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop into 1 inch cubes. Place in a medium bowl.

  2. Place eggs in a medium saucepan, and cover with cold water. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and dice.

  3. In a small bowl, whisk together mayonnaise, milk, distilled white vinegar, green onions, salt and pepper. Pour the mixture over the potatoes, and mix together with the eggs and celery. Cover, and chill in the refrigerator approximately 2 hours before serving.

  • Great potato salad for those who love red potatoes like I do. I added about a tablespoon each of dill relish and mustard though. Hint: cook the potatoes kind of slowly so the outside isnt too soft and the inside isnt too crunchy, ,like mine were the first time

  • Since I found this recipe a month ago, Ive made it at least 6 times (mainly for family & neighborhood get-togethers). Its received rave reviews at all. I love that you dont have to peel the potatoes. This saves alot of time if youre preparing for a larger crowd. I would suggest salting the potatoes before boiling and increasing the salt/pepper seasoning X 2. Otherwise, I wouldnt change a thing. This will be a staple in my collection. A perfect, creamy, crunchy potato salad.

  • An all time family favorite - with one change. I eliminate the vinegar and milk, and add granulated garlic (or garlic powder) to taste. Were not fond of vinegar in our potato salad, and the additional garlic flavor makes the dish Ive also made this dish using regular potatoes - peeled, and finely chopped yellow onions in place of green onions. Its very good I usually top with a sprinkling of paprika, parsley flakes and halved, hard-boiled eggs for presentation. Everyone asks for the recipe

  • This is a delicious potato salad. I made it for a cookout and everyone loved it. I added crumbled, cooked bacon. I will definitely make this again.

  • I made some changes to modify our taste. With these changes, I think this is a great recipe and simple too. I omitted the eggs (dont care for eggs). I reduced mayo by 1/2. I added more green onions. I also added a few dashes of Worcestershire sauce, 1/4 teaspoon of celery seed and 1/4 teaspoon dill. Also, needed more salt than recipe stated. Per all recipes cooking potatoes tips, my potatoes were the perfect texture. I left the skins on cut them into bite-size chunks. Place them in a pot and cover them with water. Bring to a boil and salt the water. Keep the pot at a gentle boil and cook for approx. 8-15 minutes until tender and drain. Cool potatoes by spreading them on a baking sheet in a single layer. I never liked making potatoe salad because Id either have hard or mushy potatoes. If you follow the cooking steps, I think youll have perfectly cooked potatoes.

  • I was attracted to this recipe because I love green onions and prefer red potatoes to others. I took some suggestions from the Summer Potato Salad recipe on this site: I replaced the vinegar in this recipe with lemon juice, and the salt with seasoned salt. To cut down on the mayo I used 1/3 plain yogurt instead. I dont think the yogurt made a difference in the taste. But I thought it needed more flavor when I tried it so I did add a few tablespoons of dijon mustard, a lot of fresh parsley, and some salt. It turned out well.

I didnt even have to ask my husband what he thought of it - his face told all He said it was a little bit better with some mustard in it, but it still wasnt that good. The only good thing about it was that it improved with age. 2 days later it tasted much better.

  • This recipe is nearly identical to my mothers - it has been a hit at family gatherings for years. Even folks who dont normally eat leftovers manage to spirit away some of it away (Im one of those who hate mayo and eggs, but go figure - this is one of my favorite dishes) Ours doesnt have the celery, and, for those who find the recipe here too bland, we use a fair amount of cayenne powder. When we were children, there were two bowls of this - one with Best Foods mayonnaise, and one with Miracle Whip. Now were all happy with the Best foods version. Oh, and ours has about a tablespoon of prepared mustard. I agree with those who prefer to cube the potatoes first, it is quite difficult to get red potatoes cooked through and still retain the peel otherwise. Someone suggested sprinkling the salt, pepper, and vinegar on the potatoes while they are still warm - I think that is an excellent idea, but would only work if they had been cubed prior to cooking. I guess what I would suggest for those who have offered less than five stars is this: potato salad is a very traditional, familial dish. If you find a recipe too bland, or it lacks or includes ingredients which arent your preference, tweak the recipe to suit yourself. This particular recipe has excellent proportions, and is a terrific base for your preferences. Great recipe

  • I had been looking for a great, quick potato salad recipe(i had never made it from scratch before), and this was superb great tasting and easy to make.

  • Brand new favorite in our house. We do find its too much mayo so we add it to taste. Also, try it with red wine vinegar instead of white. Its an amazing transformation.

  • This is absolutely the best potato salad I have ever eaten Incredible I modified it ever so slightly, adding only a splash of milk and vinegar rather than the full amount called for. I also used half sour cream and half mayo. I also added celery salt, onion powder, parsley, and garlic powder and used only egg whites. It actually tasted like a homemade ranch dressing, so good I took it to my family reunion and there were no leftovers. I will never again make another potato salad--thanks for an amazing recipe

  • I cut back on the mayonnaise a little. I just added it by the half cup until it looked about right. For our family, this potato salad was a great base but we think it needs a little "oomph". Id make this again but Id add some spices next time.

  • I add 3 tablespoons of Dijon Mustard, one bunch of scallons and 1 box of pre-cooked bacon.I put the potatoes and a large mixing bowl and add the chopped up scallons. I microwave the bacon and set aside 4 pieces. Next I crumble up the bacon and put it in the bowl and mix. Next I add the dijon mustard to the mayo mixture , mix it into the potatoes, add the eggs and mix again. Finally I pour the potato salad into a dish and top with the remaining crumbled bacon.   • As with all recipes on this site, I make it a habit to read reviews before I start. This is what I did, I cut the vinegar & milk in half added hard boiled egg white (no yolk)a Tbs. of Miracle Whip, half a dill pickle, a squirt of mustard and a couple shakes of celery seed. My 10 and 12 yr old daughters are not picky eaters, they do however have their opinions, they absolutely LOVED it.

  • This is a great recipe and close to what I have been looking for. I cut the potatoes before cooking and added a tbs. of vinegar while cooking. This keeps the potatoes firm after cooking. I supstituted yellow mustard for the vinegar and it turned out like I wanted. The oringinal recipe was fine but I had to adjust to what I was looking for.

  • Absolutely delicious I decided to make potato salad for our July 4th dinner and I found this recipe and decided to try it. I was a little scared though, since some of the people reviewing it said that it was missing things, etc. but I didnt find this to be true at all.   • This was very bland, even after I added dill. Absolutely way too much mayonnaise - unless you really like it - and I had cut it in half. If I make this again, I would definitely add garlic, fresh herbs (dill or maybe tarragon?) and possibly some mustard - it really needs something.

I didnt have green onion so I used yellow onion instead and I used about a 1-2 teaspoons of sugar to tone down the bitterness of the vinegar as suggested by a previous review. I think next time I will use less vinegar and less mayo, but otherwise a very good recipe.

  • Great recipe Im giving it four stars since I took the recommended changes and will also do some more the next time around. First, my tweaks as per other reviewers: I used one cup of mayo, one cup of green onions, one tablespoon dijon mustard, one tablespoon of wshire sauce ... but kept everything else the same. The dressing, initially, tasted overwhelmingly like onions but it was plenty to cover the potatoes. I figured the flavors would settle overnight. Next day, I tasted and the salad was actually sort of bland I was surprised. I added in at least another teaspoon or two of salt and pepper and a bunch of paprika. I was thinking Id add more dijon mustard or wshire next time and I may have to go through and read other reviewers and see what they did

  • This is good Everyone liked it when I took it to a cookout. I add a "squirt" of dijon mustard to it for a little different flavor. I sometimes also add relish. Yummm

  • I am not going to give this any less then five stars because I only used the recipe as a general guide to make potato salad. So I will just leave you with some info. I used regular baking potatos since the red ones at the store didnt look apealing. I used a couple eggs and maybe half a celery sliced super thin for a little crunch. I used salt, pepper, celery seeds,dill, and mustard powder. Combined with mayo and a dash of milk and lemon juice and a little squirt of regular mustard. This turned out very good and easy to make. Dont be intimidated to improvise when making potato salad. I found if you taste the seasonings before adding them to the potatos you can gage what is laking or needs adjusting.   • This is a great recipe. I made it pretty much as is, but I did take some of the suggestions in other reviews and added a little dry mustard and some bacon bits.   • I took the advice of Roxy52278 on this one... I added a Tablespoon each of mustard and relish as was suggested. Also, because we love green olives, I choppped up a handful of them and added those as well. I served it yesterday with our 4th of July spread and everyone loved it. This is a definite keeper

  • I tried this recipe and I have to admit, the potatoes were a bit too firm. I know I should have cooked them longer than 15 min and I will add at least 5 more min to the cook time. Aside from that, the flavor was great and the prep was easy. I am going to give it one more try before I bring it too an event.

  • This was great Brought it to a 4th of July party and got a ton of compliments. Note: I used only 1/2 cup of mayo (because thats all I had) and it was low fat and it was still great No need to pile on the extra calories and fat if you dont need to. It will still be great.

  • Easy since you dont have to peel the potatoes. I used regular size (not baby) red potatoes, and they needed to boil 22-25 minutes. I left out the eggs, added dry dill and parsley for some color and flavor. Made the day ahead--it was a little dry the next day, so added some mayo and milk to make it creamier. It is a delicious basic potato salad---will definitely make again.

  • I had been looking for a great red potato salad recipe and this is exactly what I wanted I pretty much followed the recipe as its written with only a few modifications: I added a little sugar since it was a little tart from the mayonaise and vinegar, used half mayo - half Miracle Whip (salad dressing) to help take away some of the tartness, apple cider vinegar, extra salt and pepper, seasoned salt, and a little extra green onion and celery for more flavor and crunch. My mother, who is a brutal food critic, loves it and ORDERS me to make this for every family occasion My church members also fell in love with it and are still asking me for the recipe

  • I dont make potato salad that often because I never seem to have a great recipe. They are always just so so. This was really good. I made half of the recipe. I used about 1 lb. of potatoes and red wine vinegar in place of the white. I think it could have used a little more mayo so I added some Miracle Whip to change it up. I skipped the eggs just to save time. In place of the green onions I used McCormick Minced Onion Blend. I was only able to refrigerate this about an hour so Im betting it will be great tomorrow. Two thumbs up here.

  • This was great I did a tiny bit of tweaking (omitted eggs, added 1 tsp dry mustard powder, subd lemon juice for the vinegar, and used half Miracle Whip as someone else suggested). Diced potatos before boiling. Sorry if I changed it "too much" but this isnt the way I normally make potato sald so thank you for the idea. Very simple and turned out fantastic.   • I thought this potato salad was good but not great. I much prefer more of a vinegar taste in my potato salad and I didnt think there was enough in this recipe. Next time I will tweak a bit and add apple cider vinegar and add it to potatoes when warm to absorb more of the flavor. I used less mayo and eggs then called for, and still thought it was a bit much. Overall people liked this at my last cookout, so I will give it 4 stars.

  • I love this potato salad recipe. I veganized it and friends didnt even know the difference. (i.e. use vegan subs. for mayo/dairy and skip eggs) I also use lemon juice and a little cider vinegar instead of the white vinegar and add some grey poupon and I think adding the mustard is what makes it. I also sprinkle some parsley and paprika over the top to make it pretty.

  • Very very good. I was scraping the bottom of my mayo jar, didnt have a full 1 1/2c. but it didnt ruin a thing. I did add a tiny bit of powdered Keens Mustard (with a tiny bit of milk). I also used white wine vinegar as I was too lazy to fetch the regular from the basement. A simple, quick and tasty recipe especially if you are pressed for time in the preparation. I did the potatoes and eggs earlier in the day and when I was ready to mix together - it was in the fridge in less than 30 min. & with plenty of time to get cold before the BBQ. Most assuredly on my repeat list.
